This week starts our first full week of school. The first two days went well. Here’s to another week!
With homeschooling and SoldierBoy still away, I decided to keep meals pretty simple again this week. Waffles are a favorite dinner when he’s gone, so I’ll be making them again this week. Today I spent some time prepping parts of this week’s meals–made the barbecue sauce, the Mexican rice, taco meat, chicken marinade and the sesame pasta salad. If I don’t spend time on Sunday prepping for the weeks SoldierBoy is away, I end up relying on frozen junk way too much. It makes for a tiring Sunday but an easier week.

Dinners
Hamburgers, oven fries, carrot sticks
Taco pizzas, jicama, Mexican brown rice
BBQ-grilled chicken, potato packets, salad
Pineapple-soy chicken, rice, stir-fried veggies
Kids–Pizza or sloppy joes, salad for me
Whole-wheat waffles, bacon, apple slices
Italian beef sandwiches, chips, veggie tray


Hi, I’m visiting from OrgJunkie. Thanks for posting your menu plan. The pineapple-spy chicken sounds delicious. Do you have a recipe for this? I also tend to do a lot of cooking at the weekend as the weeks are just so manic.
