Life as Mom is hosting her monthly Freezer Cooking Days June 4-June 7. We are working our way through the freezer stash I made before M’s arrival and I’m eager to get some summery items into the freezer. If I get all of these things made, that will be about 20 meals. A good amount considering I’m always scouring for new recipes, like to cook from fresh some nights and we have meals still in the freezer.

Honey Chicken Kabobs x 2 (raw in marinade, minus the veggies)
Garlic-Lemon Chicken Kabobs x 2 (raw in marinade, minus the veggies, cut back on lemon per DH)
Indian-Spiced Pork Kabobs x 2 (raw in marinade, minus veggies)
Cajun Chicken Sandwiches x 2 (raw seasoned, buns wrapped and frozen in bag)
Simple Caribbean Jerk Chicken x 2 (eaw in marinade)
Hamburgers x 12 (raw, shaped and seasoned)
Asian Beef Skewers (raw in marinade)
Grilled Pork Tenderloin (raw, seasoned)
Ham Steaks w/glaze (uncooked steaks, glaze in attached baggie)
Inside Dinners
Beef Taco Skillet (on the menu this week, so I’ll double to freeze one)
Italian Beef Sandwiches (cooked & shredded)
Make Ahead Chimichangas (not sure if I’ll get to this)
Chipotle Chicken Fajitas (another one I’m not sure I’ll get to)
Miscellaneous
Freezer Peanut Butter Pies x 1/2 (make into individual-sized pies rather than regular-sized ones)
Oatmeal Toffee Cookies (raw, shaped into balls)
Butterhorns (maybe a double recipe, we’ll see)
Cornbread mixes x 6 (with directions included for wet ingredients)
