Honey Chicken Kabobs

Honey Chicken Kabobs
Serves 4-6
1/4 cup vegetable oil
1/3 cup honey
1/3 cup soy sauce
1/4 teaspoon ground black pepper
8 skinless, boneless chicken breast halves cut into 1″ cubes
2 cloves garlic, minced
dash of hot sauce, optional
assorted vegetables
In a large bowl or ziptop bag, combine oil, honey, soy sauce, garlic & pepper.  Reserve a small amount for basting and then add chicken and vegetables to marinade.  Marinate in fridge for at least two hours.  Lightly oil grill grates and grill skewers over medium to medium-high heat for 10-12 minutes or until juices run clear.  Baste frequently while grilling.
**NOTES: I like to soak my skewers in water for 20-30 minutes to help prevent them catching on fire while grilling.  I have frozen this marinade wonderfully.  I do just the marinade & chicken and then, once thawed, add the vegetables (I don’t like the texture of the vegetables after being frozen).   I also like this marinade with 1/4 cup (or so) of pineapple juice or lemon juice.

  2. These look great! I think kabobs are the cutest but I don’t usually put things on a kabab, I don’t trust my kids. They would totally be jabbing each other when they were done eating. :-)
