As I mentioned in my Bourbon Chicken post, I really like to make dinner kits for the freezer. As much as I menu plan and make my grocery list from it, I inevitably forget some important ingredient every week. Every. Week. LOL The kits have been a dinner-saver many times. Inside a gallon-size freezer bag I put the freezable components in smaller bags quart or pint-size freezer bags (I reuse the gallon-size bags). Inside the bag or on the label, I write up any directions/notes I need to know.
Below are some kits I make. Part two of this series can be found here. Unless noted, each of the kit components are in a quart or pint-size freezer bag.
Fajitas
1. Strips of raw & seasoned beef or chicken
2. Strips of bell peppers and onions
3. Tortillas
Bourbon Chicken
1. Uncooked, premeasured rice (I put it straight into the gallon-size bag)
2. Diced raw (sometimes in a marinade) or partially cooked chicken
3. Sauce (prepared up to the part where the chicken is added back into the sauce)
Teriyaki Chicken
1. Uncooked, premeasured rice (I put it straight into the gallon-size bag)
2. Diced raw (sometimes in a marinade) or partially cooked chicken
3. Teriyaki sauce (prepped to about 2 minutes into step 3 of that recipe)
Cajun Chicken Sandwiches
1. Buns double-wrapped in plastic wrap
2. Chicken breasts rubbed with the spice blend (if I started with fresh chicken) OR
3. Frozen chicken breasts (if I didn’t start with fresh chicken) AND
4. Snack-size bag of the spice blend
Enchiladas
1. Bag of meat
2. Bag of sauce
3. Bag of cheese
4. Tortillas (in their store bag)
Taco Kit
Same as the enchilada kit minus the sauce and, sometimes, minus the tortillas if we’ll have it in hard shells
Italian beef
1. Buns double-wrapped in plastic wrap
2. Bag of meat
3. Slices of cheese double-wrapped in plastic wrap

I love your dinner kits. They seem simple enough that my teenagers could finish up a meal without my direct help. (and when I am gone they could take over)
I love this idea. I have been freezer cooking for years, but never put kits together. I just might try this next time.
I have done a similar kit. I am a single mom with a teen and tween. I sometimes leave kits like this for them to prepare if I am late from work. So dinner doesn’t have to be take out. I love the idea of having them ready all the time. I never thought of freezer kits. Thank you I will start doing this.
That is a genius idea. I am totally going to have to start doing that. I need to start freezing ahead more anyway.
