Cajun Chicken Sandwiches

With grill season beginning, I’m starting to fill my freezer with all our favorite grill recipes.  This one is a hit for everyone including our kiddos (5 & 2).

Cajun Chicken Sandwiches

4-6 skinless, boneless chicken breast halves
1 tablespoon olive oil
1/2 teaspoon celery salt
1/2 teaspoon garlic salt
1/2 teaspoon lemon-pepper seasoning
1/4 teaspoon cayenne pepper
1/4 teaspoon paprika
1/4 teaspoon pepper

Flatten chicken to 1/2-in. thickness.  Combine oil and seasonings; rub over chicken breasts.  Cover and refrigerate for at least 2 hours or overnight.  Lightly oil grill rack.  Grill, covered, over medium heat for 3-5 minutes on each side or until chicken juices run clear.

Freezer Directions
Prepare through rubbing the chicken with seasonings.  Spread chicken on a cookie sheet (I like to lightly spray it with cooking spray first) and freeze until firm.  Remove chicken breasts and store in an air-tight freezer container.  To cook, either thaw desired number of breasts in the fridge OR grill from frozen (adding 2-4 minutes per side).
